For decades, the question of whether a food is healthy or not has centered largely on what’s in it: Does it have a lot of fiber and vitamins? Is there an excess of fat, salt or sugar?
But more recently, many experts have begun to believe that how our food is made may be just as important as what it’s made of. With this updated way of looking at dietary health, a new villain has emerged: ultraprocessed foods.
